Established in 2015.
Meat and a tortilla. Three bites of pleasure. It's within this simplicity that we savor the taco's immediate appeal. But it's also within this simplicity that an appreciation of the complex can be realized. A culinary complexity as diverse as the history of Mexico itself. And while the taco has become a beloved staple of American food culture its typical interpretation does not begin to reveal its amazing potential. At Nixtaco we want to open people's eyes, and palates, to a whole new take on Mexican food. Originally from Monterrey, Mexico. Currently residing in Roseville, CA.Moved to California in 2010 and was surprised by the vast amount of Taquerias/Mexican Concepts in the area, but appalled by the very limited variety of food offerings. Every menu was pretty much a copy of the next one.Along with his wife, they decided to bring some variety to the area by replicating the food offerings a traditional street taqueria in their hometown of Monterrey would offer.
