Joe Fabrocini began cooking in Waikiki, Hawaii in 1975 at Matteo's Restaurant where his Dad was General Manager. "When he hired me, I showed up for work and he put me on the dishwasher for two weeks, so I started from the ground up". Later he cooked in his Father's restaurant, Fab's Italian Kitchen in Tarzana, CA starting in 1981 and later opened his own restaurant Fabrocini's Italian Kitchen in 1992 in Tarzana where he was chef / owner until 2000. After an eight-year break from the restaurant business Joe returns to his passion in the restaurant business as Fab Hot Dogs. "Hot dogs has always been my secret passion" says Joe. "There's nothing quite like the snap of a great dog, this is the most fun I've had cooking ever."
