George Gallardo brought his special talent and own expertise of working for other national restaurant chains and his own love of the Southwest to create the concept of Blue Agave. His dishes combine local flavors and favorites found throughout Mexico, South America and the American Southwest. Be sure to try all of your favorite Mexican food dishes and then extend past that to try the specialties - they will delight your palate with a symphony of different tastes and flavors, such as Mahi Mahi Mazatlan Mango Wrap, Kiva Grilled Steak and Shrimp, Montego Bay Coconut Shrimp or the Puerto Nuevo Tostada.
