Chan offers traditional Korean dishes using Western ingredients and modern cooking techniques. Korean-born Chef Heong Soon Park and his team bring diners an outstanding array of powerful flavors which blend spicy, salty, sour, sweet and umami on the plate. Our focus is on the creating a complete, immersive Korean culinary experience for our diners. Our full cocktail bar features an array of craft cocktails developed specifically to complement our menu.
History
Established in 2012.
Chan originally opened in 2012 when Chef/Owner Heong Soon Park expanded upon his success with sister restaurant Bacco Cafe. After garnering a terrific reputation amongst Seattle residents and visitors to our fine city, Chef Park moved Chan Seattle from its small space in Pike Place Market to a larger, more open space in the Paramount Hotel within the downtown core of Seattle.

A native of South Korea, Chef Park grew up a world traveler living in places such as Malaysia and Switzerland prior to moving to the United States. Chef Park was first exposed to the restaurant business while working at his parent’s Japanese restaurant in Anchorage, Alaska. After graduating from business school, he moved to Seattle and quickly discovered the original Chan Seattle location.Park attended culinary school at the Art Institute in Seattle specializing in French and Italian cuisine. He opened Chan in 2012 which quickly garnered praise from critics and diners alike. Park has gone on to win a Rising Star Award from StarChefs for Sustainability in 2015. In 2020, Park opened the highly successful Meet Korean BBQ restaurant in the Capitol Hill neighborhood garnering a reputation as one of the top spots for Korean BBQ in Seattle.In the fall of 2022, Park relocated Chan Seattle to a larger, completely updated space within the Paramount Hotel to serve more hungry customers.
