Chau Do has been a professional chef for the last 20 years. On every trip home to Vietnam, he was floored by the difference in quality between authentic Vietnamese street food and the Vietnamese-Thai-Chinese fusion that is typically served here in the US. He was inspired to create an experience for Americans to try and love authentic Vietnamese cuisine.
