San Antonio's ONLY Mexico City Kitchen - The MEX without the TEX. All our dishes are cooked in water, there is no lard, no grease no starches or flour in any of our sauces or soups. Instead we cook everything daily from SCRATCH, using only the freshest vegetables, meats, fish and a large variety of chiles. Chile is what gives our unique dishes their individual flavors. Guajillo's IS the Shortcut to Mexico - Your Tastebuds will tell you from the first bite just how unique and out of this world our flavors are.

History

Established in 1999.

San Antonio's ONLY Mexico City Kitchen. Mexico has over 4,000 different dishes, 2nd in the world after China. Daily preparation with only the freshest ingredients. Our flavors come from many different chilies, some mild, some spicy, some very hot! You will not find any of our dishes in other restaurants, our flavors are unique and carefully paired to bring you the best Mexico City flavors. Healthy. Guajillo's The Shortcut to Mexico Chef Dianko Barajas, holds a degree in Hotel and Restaurant Management as well as a Culinary Degree from Salzburgerhotelfachschule in Salzburg, Austria. He has worked in kitchens from Europe to California, and with celebrated Chefs such as Paul Prudhomme and Wolfgang Puck.In 1994, Barajas opened a branch of Puck's famous Spago restaurant in Mexico City, where he as Executive Chef developed the extensive menu and, for four years, managed the restaurant. His familiarity with Mexican Cuisine is derived from that time.Dianko and his brother Carlos joined forces in July 1999 to bring simple, affordable, authentic Mexico City Cuisine to San Antonio.  Starting in a modest shopping strip on San Pedro Avenue,Taco Inn was established and was rewarded with much success. Two years later the opportunity was available to relocate and the brothers reopened their already famous restaurant as Guajillo's The Shortcut to Mexico on Blanco Road and Loop 410.
