I opened Roots Cafe with the intention of supporting local, organic, and sustainable farmers.  By buying and cooking seasonal meals we are able to support a healthy lifestyle and show that sustainable food can be amazing and delicious.  West Chester is a small town in Chester County surrounded by some great farmland and we are able to source great food from these farms.  We found a great building in West Chester where we feel we were able to capture the feel of this area and create a nice cozy setting for guests to enjoy their experience and the local and organic fare.  I am inspired by every other restaurant that strives to utilize local and sustainable sourcing to create their menus, as it is so important for todays food industry to start sourcing more local and organic products in order to develop a long lasting, healthy and sustainable food industry.
