Northern Italy's rustic charm meets Miami's vibrancy. Salumeria 104 is a rustic, trattoria-style restaurant serving signature salumi dishes, and traditional home-made italian classics. Chef & Co-Owner Angelo Masarin is intent on creating dishes inspired by his childhood, such as the ones his grandmother taught him. Chef Angelo's passion for food comes with the desire to prepare the finest, freshest ingredients.

History

Established in 2011.

With over 20-year experience in the restaurant business in South Florida, Graspa Group brought to town a new concept that will allure the more sophisticated palates with simple, traditional, exquisite dishes. Salumeria 104 is based on the Italian concept of a trattoria and small neighborhood shop where one can find Italian specialty cured meats and other delicacies, also known as a salumi shop. The restaurant combines Northern Italy's rustic charm and Midtown Miami's vibrancy while serving impeccably authentic Italian food. The menu focuses on dishes that let the essence of each ingredient transpire including a variety of salumi, fresh homemade breads and pastas, and Italian products. All Prosciuttos are not made equal, and Salumeria 104 is an opportunity to continue sharing the authentic and complex flavors of Italy with the increasingly-knowledgeable foodies community.

Business Owner

Angelo Masarin was born in the Venetian Province of Treviso, Italy in the early 70's. Shortly after grade school he enrolled at the prestigious Istituto Professionale Alberghiero, followed by the Culinary Institute of Castelfranco Veneto, where he received his diploma.  In all Angelo has over 25 years of culinary experience and his resume includes some of the most recognized names in Italy.Upon his arrival to Miami in 2009 he served as Chef de Cuisine in Sardinia Enoteca before getting the opportunity to work as Chef de Partie at Casa Tua under Executive Chef Sergio Sigala whom he followed to SOHO House Cecconi. On December 2011 Angelo capped his dream of opening his own restaurant co-owned with Graziano Sbroggio & Carlo Donadoni. Masarin makes sure that every day the dishes served at Salumeria 104 meet the high standards of quality and authenticity of the best traditional Italian cuisine.
