With the support of his family, the Amherst Family purchased Knight Trail Café in April of 2015 - a small blue-collar, diner style restaurant enjoyed by local residents. It was later renamed to CHAZ 51 Café and Coffeehouse. The significance of the number 51 is the mathematical end result of the ages of his family members at the time the restaurant opened its doors, and divided by the 5 members of the Amherst family.But a café was not what Charles had in mind, and two years later he transformed, branded, and launched CHAZ 51 Bistro. He reignited his culinary expertise and created a menu full of fresh and flavorful dishes that continue to draw local patrons and visitors from across the globe. Although the location was not ideal, he knew that his passion and attention to detail would call out to foodies everywhere...And it did. CHAZ 51 Bistro has since become CHAZ 51 Steakhouse and a renowned foodie destination offering high-end cuisine to challenge even those with the most discerning
