At Roli Roti we are passionate about serving you only the freshest produce and happy, healthy meats raised by trusted family farmers. No big industrial crops here -- just seasonal, fresh from the garden good food.

History

Established in 2001.

As a son of a Swiss 'Metzgermeister', or master butcher, Thomas Odermatt literally grew up in his family's butcher shop in the Swiss Alps. This is where Thomas learned his family's secrets of succulent, tender rotisserie. Thomas earned his masters degree in organic farming from ETH, Zürich then traveled to the US to continue his education at UC Berkeley. He was captivated, instead, by the local, gourmet food scene developing in Berkeley. The wood fired ovens of Chez Panisse and the lively Farmers' Markets resonated with him. Yet he soon realized that freshly cooked, healthy street food was nonexistent in the US. "No one in America was serving simple, wholesome food on the go." Meanwhile the rotisserie dinners Thomas prepared for friends were so wildly popular that he was inspired to fill this particular niche, by taking his family recipes on the road - indeed, to the streets. And the idea for Roli Roti, Gourmet Mobile Rotisserie was born.

Thomas is a third generation "Metzgermeister", or master butcher. Growing up inside of his family's butcher shop just outside of Zurich, Switzerland, Thomas quickly learned the craft of European butchery. He brought that same expertise and passion to the Bay Area where he opened up his first Roli Roti Gourmet Rotisserie food truck. For the past 15 years, Thomas and his team have happily been serving Bay Area eaters perfectly cooked meats, drippings-laden potatoes, and its famed porchetta sandwiches. In wanting to feed people in the Bay Area and beyond, Roli Roti has also created Butcher's Bone Broth--its first retail product and the fastest growing organic fresh bone broth.
