Matador Cantina is now Madero 1899! Same team, service and quality OC has came to love, now with a new name reflecting our downtown Fullerton heritage. Back-to-back winner of Golden Foodie Awards 'Best Mexican Restaurant', we offer Mexican-inspired cuisine made entirely from scratch and using only the freshest seasonal ingredients, housemade sauces and seasonings. We also offer an array of beers, premium tequilas, and signature cocktails, including our handcrafted Margaritas, voted "Best Margarita in Orange County." Combined with warm and inviting décor, we promise a unique and rewarding dining experience. In addition to daily lunch, dinner and late-night menus, Matador Cantina proudly offers Champagne brunch, served Saturday and Sunday, as well as a convenient Take-out service. Happy Hour is also served Sunday through Friday from 2pm until 6pm.
History
Established in 2009.
Housed within the oldest building in Fullerton (1899), Madero 1899 extends to the long history of dining and drinking establishments, which have occupied the historic brick structure for over 50 years! Independently owned and operated, Madero 1899 prides itself in providing Mexican inspired dishes made entirely from scratch and using only the freshest seasonal ingredients. We also offer an array of beers, premium tequilas, and signature cocktails, including our handcrafted Margaritas, voted "Best Margarita in Orange County." Manager
Executive Chef and GM, David Dennis has been with Matador Cantina, now Madero 1899, since its opening in April 2009. While remaining head chef, Dennis was appointed to the position of GM a year later. A graduate of Scottsdale Culinary Institute in Scottsdale, Arizona, chef Dennis, a Southern California native, expanded his culinary repertoire to include a wide range of Mexican cuisines while living in Mexico near Puerto Vallarta and while working as a private chef on a chartered yacht in Panama."Living in Mexico afforded me the pleasure and incredible firsthand experience of authentic Mexican cooking at its best," said Dennis. "What I now apply to my own recipes was initially developed from generations of cooking methods straight out of a Mexican kitchen."A resident of nearby Anaheim, you can find chef Dennis on the floor at Madero 1899 nearly every day. "It's my home away from home."
