Lotus Cafe & Juice Bar is dedicated to serving fresh, natural, healthy food at affordable prices, prepared with love, simplicity, and a joyful heart. Our ingredients are sourced with care and are always natural. We are predominantly a vegetarian restaurant, with some chicken and fish options; there's also a turkey burger for our non-vegetarian patrons. Lotus has been a favorite of Encinitas locals since our opening in 2009; Our integrated menu noting all of our vegan, strict vegetarian & gluten-free options with icons, is available at both entrances. We make our own fresh soups & vegan deserts in our kitchen every morning; We handmake all of our own salad dressings, salsa, and sauces. We also feature great salads with organic lettuces. Organic carrot, veggie juice, and wheatgrass juice is squeezed to order; Fruit smoothies are made with fruit and fruit juice only. Lotus Cafe one of a kind, locally owned and operated. History

Established in 2009.

Established in 2009/ My husband, Carl, and I (johanna) have been dedicated yoga practitioners and vegetarians for 26 years. Shared interests through our lives have included immersion in yoga & meditation, holistic & spiritual healing, and natural foods. We relocated from Ashland, Oregon to Encinitas 12 years ago, in a sincere seeking to deepen our practice of Kriya Yoga, following the teachings of Paramahansa Yogananda. We did not have the desire to open another business and only hoped to be simple yogis living our practice quietly. The Divine had another plan for us... through much prayer and meditation, it became clear that serving our community by opening a natural foods cafe was to be our calling in Encinitas...

carl - " I moved to Encinitas from Ashland, Oregon seven years ago.  I taught hatha yoga and meditation in Ashland for a number of years.  My wife & I also owned a natural food restaurant there, as well as Ashland Yoga Center.  I have a degree in Marketing with a minor in Economics, and have been in the retail / restaurant business most of my life."johanna - " Completed my bachelors degree at University of California, Santa Barbara, with a double major in Environmental Studies and Cultural Anthropology and a certificate in Global Peace and Security.  Four years of study & certification in bioenergy healing with the Brennan School of Healing. Studied Ashtanga Yoga in Mysore, India with Sri K. Pattabhi Jois.  Completed yoga teacher trainings with Tim Miller & Richard Freeman. Taught Ashtanga Yoga for 10 years; Private healing practice for 14 years."Yoga studies for both of us include study of Paramahansa Yogananda's lessons & Kriya Yoga through Self Realization Fellowship.
