History

Established in 2006.

Los Agaves was founded by Jaime Mendez and family, and offers authentic Mexican cuisine and world-class Mexican and Mediterranean catering. Jaime moved to Seattle from Mexico City 18 years ago, and cooking is a big part of his family tradition. After finished his ACF chef apprentice program choose Los Agaves to experience flavors that combine old family recipes with Pacific Northwest ingredients stablished in Pike Place Market.

Growing up in Mexico City, Mendez watched his father and grandfather create fiesta-worthy feasts, and the family passion must have been contagious. In 2001, Mendez landed a full scholarship to the Culinary Arts School at Seattle Community College. After graduating in 2006, he opened Los Agaves Restaurant  with the help of his brothers Alfredo Mendez and Oscar Mendez using recipes developed by Mendez's mother, Catalina Jimenez. The company operates stands at local farmers' markets and offers catering services, recently expanding its catering menu to include Margarita, Mojito, Sangría Bar & Mediterranean dishes.You can try his flair of Mexican food at Pike Place Market 1514 Pike Place Ave 7 Seattle (Post Alley).
