History
Established in 2008.
The Prime Smokehouse was originally established as strictly as a restaurant featuring slow-smoked ribs, brisket, chicken and pork. However, each year the menu expanded to include a wider variety of Chef Ed Wiley's favorite dishes. All of the recipes were influenced by Ed Wiley, Jr., a world-renowned jazz and blues saxophonist and an amazing cook. In addition to fine cuisine, the restaurant is decorated with many of the musician's recordings and photographs, and jazz plays continuously through the house speakers.

Ed Wiley III is the son of famous jazz saxophonist Ed Wiley, Jr. He and his wife, Yalem, opened their first BBQ restaurant in the Raleigh area in 2008. Five years later, they opened The Prime Smokehouse in Rocky Mount, NC, subsequently closing the Raleigh location. While slow-smoked, Texas-style ribs and brisket is the mainstay -- in the tradition of Ed's Texas-born father -- they also feature Carolina-style, vinegar-based pulled pork, hand-cut steaks, a wide range of fresh seafood and gluten-free and vegetarian dishes. Unlike many "BBQ" restaurants, Prime specializes in several nuanced, homemade side dishes. Everything is made onsite from scratch. The restaurant accommodates both casual diners and those looking for an intimate, beautiful setting. The venue is warm and beautiful, yet far from pretentious.
