Established in 2018.

Established in 2018 After recognizing the exploding popularity of sushi burritos in the west coast, owners Lawrence Yoo and Jeff Carter decided to bring the concept of a sushi burrito to the Triangle area. Opening in February 2018, they named their fast-casual concept "Sushioki" because "oki" means "big" in Japanese. Sushioki provides the Triangle area with fresh, healthy, and delicious sushi burritos and bowls.

While visiting friends in California, Lawrence Yoo was introduced to the concept of a sushi burrito, and he loved it!  He returned to Durham and enlisted his friend, Jeff Carter, to begin working together on bringing the sushi burrito concept to the Triangle area.Being Korean, Yoo worked with his family and friends to develop a Korean/American fusion of flavor combinations that became Sushioki's sushi burrito menu.   Yoo and Carter had opened Sushioki in February 2018 with several goals in mind...to create a healthy option to fast-food, to create a dining environment where guests can be known and valued, and to support their community, especially those who are marginalized.
