History
Established in 2008.
Chubby's Tacos opened for business on Monday, May 8, 2008. Yep - Cinco de Mayo! What a most fitting birth day for a Mexican restaurant.
Joseph Lytton, Chubby's owner and founder was an electrical engineer for 26 years. Work took him just outside of Dallas where he fell in love with Mexican food. But not that Tex-Mex stuff. What he found was the homestyle food that Mexican mothers make for their families. Their labor intensive, full flavor marinades changed forever the way he viewed Mexican food. When work returned him to his native North Carolina, he could no longer get the food he so craved. So he made his own. Come to Chubby's Tacos and taste the difference.
