History

Established in 2003.

The Simply Crepes concept started in April 2003, by Karen Heroux. She was inspired by Oprah Winfrey to "follow her passion"! Karen who previously worked for Wegman's Food Market in Rochester, New York, always enjoyed creating amazing food for her family. She learned from her Italian grandmother and mother how to prepare amazing italian specialities and took a few cooking classes to fill out her repretoire. Karen chose to use a crepe to bring fresh and unique presentations of food to the center of the plate. Many of her sauces use New York State Pure Maple Syrup! Her husband (Pierre) and daughters (Nicole and Michelle) are also part of the business. Pierre oversees finance and operations and is currently overseeing the startup of the Raleigh location. Nicole oversees business development including catering and special events. She is currently overseeing the Canandaigua, New York Cafe. Michelle focuses on human resources, employee training and oversees the Pittsford, New York Cafe
