In 2010, Thomas decided to quit his corporate job and start a food truck called Mexicue, blending  Mexican cuisine with Southern American Barbecue. The truck drew lines that ran down multiple city blocks and was raved about by the press. Mexicue has now evolved into a full service restaurant and bar specializing in tacos and tequila.
