The Zaza family are from Roma Italy, and have brought with them to Southern California their favorite recipes for pizza using only fresh ingredients and the best doppio zero flour. Roman pizza is a medium thin crust pizza with simple ingredients; olive oil, 00 flour, water, yeast, salt, and a touch of sugar. The pizza is sold by the slice (pizza al taglio) and baked in large rectangular trays. 00 flour is the finest grade of flour milled in Italy, and has a lower gluten content than most flours, making for the perfect pizza dough.
