World renowned for its award winning "New Style" Japanese cuisine, Nobu continues to offer savvy diners across the globe a culinary adventure. Our San Diego location is yet another canvas for Chef Nobu Matsuhisa to display his legendary dishes, such as the Black Cod Miso and Yellowtail Sashimi with Jalapeno. The restaurant which is nestled in the perennially hip and centrally located Hard Rock Hotel also features unique creations by Executive Chef David Meade who has honed his skill at Nobu locations in Miami and New York. Nobu San Diego delivers equally on food, impeccable service and ambiance that is sophisticated yet lively.
History
Established in 2007.
Nobu, the world's most recognized Japanese restaurant known for its innovative new style Japanese Cuisine, launched its San Diego location in November 2007 at the Hard Rock Hotel San Diego in the heart of the Gaslamp Quarter. With the original in New York, the Nobu brand is now an empire that spans across the globe, offering signature dishes such as Yellowtail Sashimi with Jalapeno, Tiradito Nobu Style, Rock Shrimp Tempura, and Black Cod with Miso. Nobu San Diego also features new creations from the brick oven. Conveniently located across from the Convention Center, Nobu San Diego is open for dinner nightly at the sushi bar or dining room, for drinks at the bar lounge, or for special events in the private dining room. The Rockwell Group designed space is full of elements like the onyx sushi bar and the fish basket pendant lights which are evocative of its sister properties.

Nobu M.
Business Owner
Born and raised in Saitama, Japan, Nobu Matsuhisa began his cooking career with a rigorous apprenticeship at a respected sushi bar in Tokyo. After honing his craft in Peru and Argentina, he settled in Los Angeles and opened Matsuhisa in Beverly Hills, California, in January 1987. Matsuhisa was an instant success and became a magnet for food lovers and celebrities alike. It was at actor and director Robert De Niro's urging that together they opened the very first Nobu in New York City in 1994 with restaurateur Drew Nieporent. Like Matsuhisa, Nobu was an instant hit. The success led to Chef Nobu and various partnerships opening restaurants and hotels around the world. In addition to his restaurant accolades and personal honors, Chef Nobu has also written 5 cook books and in 2014, Nobu released his first autobiography in Japanese titled The Smiling Faces of My Guests Mean Everything. It was translated into English with the title Nobu A Memoir and released in 2017.
