Born and raised in Thailand, Piyawat Sangkapong, nicknamed "Ton" (meaning Lotus flower), decided to move to the United States in 1990 after attending Chiang Mai University in northern Thailand. Sangkapong first opened Lotus Thai in Hillcrest with a menu consisting of dishes inspired by his mother's traditional Thai cooking that he fondly recalls from childhood.  Sangkapong believes that food knows no language, and it's through his unique menu items at Lotus Thai, that he carries on the traditions of his culture and family. Although curry paste and coconut milk are staples in the kitchens at Lotus Thai, he says that his favorite kitchen gadget is the Foi Thong Maker. This delicacy symbolizes longevity longevity and everlasting love, because of its long strands.
