History

Established in 1980.

Originally a butcher shop, founder, Terry Kaplan, expanded it to a market/restaurant which flourished as foodies became intoxicated with new ingredients & wanted to try them in the shop. Soon Hugo's became 1 of the purveyors of the popular Power Breakfast. Terry's philosophy about the restaurant pioneered the idea of well-being, a place where people cared about each other. That included wanting to create ways to eat "well." Subsequent changes to the menu always reflected & pushed the boundaries of current health trends, incorporating more vegetarian dishes, then vegan dishes, then gluten-free & allergy specific dishes, while still maintaining a homey, neighborly, atmosphere. That philosophy continues today at all our locations: forward thinking & family-friendly (extended & created families count).
