History
Established in 2005.
Colibri Mexican Bistro lies in the heart of San Francisco's bustling Theatre District, just a block west of Union Square. Spanish for "hummingbird," Colibri combines the simplicity of authentic family recipes with fresh, high-quality ingredients to bring diners unparalleled, delectable Mexican cuisine in a charming, turn of the century cantina setting. This warm and inviting eatery is reminiscent of Mexico City restaurants of the 1900's, decorated with classic Spanish paintings and accentuated by a vast collection of uniquely shaped and rare tequila bottles. Filled with energy, Colibri projects black and white 1940's Latino-film clips at the front of the house, while the open kitchen in back provides glimpses of its colorful cuisine in different stages of completions. Boosting a knowledgeable staff and attentive, sociable management, Colibri is dedicated to providing a memorable dining experience for both tourist and locals alike.
Meet the Manager
Business owner information
Emma N.
Manager
Emma Navarro grew up in Cuernavaca, Morelos, Mexico. Although her local community acted as inspiration, Emma first latched onto food through her daily exposure to a fusion of Lebanese and Mexican cuisines thanks to her mom's explorations in the kitchen. After moving to the United States, Emma entered the culinary field at Consuelo in Santana Row. This experience is where she first met restaurateur, Eduardo Rallo, the current proprietor of Colibri Mexican Bistro. When the restaurant closed, Emma followed Eduardo to his next project at Colibri's first location in Union Square, San Francisco where she assumed the role of a restaurant manager. She quickly fell in love with Colibri's menu, noting long-lasting favorites such as Pechuga con Huitlacoche, Mole Poblano, and Camarones con Rebozo. The food pulled from traditional Central Mexican techniques and flavors with an assist from California's exceptional produce, all attributes that Emma is excited to see return to Colibri's updated space
